A combination of Hawaiian Sweet & Sour, Spicy Mango Creole and Spicy Orange Sauce makes for an island hopping adventure that ends with a bang. Chicken breast mixed with a medley of colorful vegetables and pineapple it's paradise on a plate.
Fresh Hon-maguro in April thanks for the warm water El Nino! My brother-in-law caught a beautiful Pacific Blue Fin Tuna last weekend. Seriously So Cal B-Fin in April. What followed were several nights of Sashimi and BBQ's. With some of the Blue Fin I made a simple fresh tuna salad added some diced Alligator Pear (avocado) and a 4 cheese blend. Bundled up in an egg roll wrapper and deep fried. Fantastic! Much Love Mahalo Brother Blue Fin.
Japanese say Tsunami is: Big Wave in Little Harbor. Brother I see a swell coming in. Some hangovers are bigger then others. Its unfortunate but true. Here is where my ongoing love affair with cheese bread collides with my over the top sandwich making style. I have a firm belief that has served me well over my many years in kitchens even simple can be made Big! Good Dad Bad Man is declaring April and May "Months of the Melts". Prepare for the cheese to flow and let the madness begin.

In this corner weighing in at over 1 pound "The Crusher" Cali Chicken Club Melt. This layered Cheezzy stacked tall variation of a California classic kicks ass and takes names. Using the Cheezzy Parmesan Bread to create this next generation sandwich is the future. I have no shame. This great picture doesn't do "The Crusher" Cali Chicken Club Melt justice. The pure joy of eating this bad boy was without a doubt a high point in my life at least a high point of this night. I believe in making food that can be shared and "The Crusher" is no exception. Cut in half or in thirds the portions won't disappoint. If you have an oven you have the capability to create your own unique Melt variations.
