AKA Tuna Melt My Heart. In some corners of this country Tuna Salad mix is as close to seafood as it gets. No problem make a Grilled Tuna & Cheese and never look back. Sometimes you can't be with the one you love so love the one you're with. Someone should put that line in a song or did they?
I know we live in a conformist society but sometimes a good cookie cutter comes in handy. This beauty is about ten years old and going strong. For those of you who don't know one year in a cookie cutters life is equal to seven years for you and me.
3 ounces Albacore Tuna Salad
2 each sliced Sargento Colby Pepper Jack Cheese
2 each slices Steakhouse Tomato
2 each sliced Thick Cut Potato Bread
1 each tablespoon Challenge Butter (salted or unsalted)
Wash your hands with medium hot water and soap. The cookie cutter I use in this recipe is approximately 2 1/2 inches by 2 1/2 inches. Sizes and shapes can very in this case I was fortunate to find this beauty hiding in the back of the kitchen utensil drawer. Start by cutting out your shape in the Bread, Tomato and Sargento Colby Pepper Jack Cheese. On the bottom piece first place the shaped tomato slice. On top of the tomato spoon out approximately 1 1/2 ounce of Albacore Tuna Salad and mold to the shape. On the top piece of bread place the Sargento Colby Pepper Jack Cheese. Turn your oven on to 375 degrees to preheat. Then on your stove preheat a skillet on medium high heat and place 1 each tablespoon Challenge Butter. Allow butter to melt and coat the skillet then place your half sandwiches in skillet to grill bread. Once bread is golden brown turn off heat and place the half sandwiches on a sheet pan with or without a rack. Put in oven until cheese is melted and tuna is warm approximately 3 to 4 minutes. Turn oven off and remove sheet pan to assemble. Take the melted cheese side and place on top of tuna side. Gently press down to bond the two halves.
The Sargento Colby Pepper Jack was an excellent choice for this sandwich with the tuna mix it really made the flavor profile memorable. You can see the cheese cut is in half pieces was done to maximize the utilization of each slice. I promise no food was wasted in the making of this recipe.
The bread will grill fast in a preheated skillet so monitor this process carefully. Move the halves around in the pan a couple times anticipating hot spots on the skillet that might cook one side faster. It should take no more then 2 to 3 minutes to achieve the golden brown you require. Then move the halves over to the sheet pan. I prefer to use a rack on my pan to avoid the bread cooking any further especially if I reached the perfect golden brown.
Oh my, I try not to get to girly with my creations but these little darlings nail it. Pair it with a nice Sunday brunch champagne or sparkling white wine. I suggest any bottle Korbel to finish this effort with. Enjoy!
