AKA Papa's Pesto Pasta Salad. Commonly served as a side dish this vegetarian delight holds its own as a main course. I love pesto who doesn't. I guess there's more then a few who don't so this recipe is not for you. Loaded with a medley of colorful vegetables this is a winner.
INGREDIENTS 1 each 7 ounce Rana Basil Pesto 2 each pint glasses cooked Barilla Penne Pasta 1 each pint glass Bomba Bruschetta Mix (recipe in the Sides & Sauces section) 1 each half pint glass julienne cut Yellow Bell Peppers 1 each half pint glass julienne cut Red Bell Peppers 1 each half pint glass sliced Red Onions 1 each half pint glass sliced Medium Mushrooms 1 each martini glass (4 ounce) chopped Fresh Basil 1 each table spoon minced Garlic 1 each table spoon McCormick Pure Ground Black Pepper INSTRUCTIONS Wash your hands well with medium hot water and soap. Follow the directions on the Barilla Penne Pasta box and cook half the dried pasta in a 16 ounce box. After the penne pasta has been cooled put 2 each pint glasses in a stainless steel bowl. Add 1 each half pint glass julienne cut Yellow Bell Peppers, 1 each half pint glass julienne cut Red Bell Peppers, 1 each half pint glass sliced Red Onions, 1 each half pint glass sliced Medium Mushrooms, 1 each martini glass chopped Fresh Basil, 1 each table spoon minced Garlic, 1 each table spoon McCormick Pure Ground Black Pepper and 1 each Rana Basil Pesto. Using a large spoon or pair of tongs mix the contents of the stainless steel mixing bowl until all the ingredients are completely blended. Great for a hot summer night. Papa's Pesto Pasta Salad is full of flavor and can be made with a number of different types of pasta. You can add chicken or tuna if you like to create your own variation of this recipe. Serve with red or white wine. I personally recommend a fanciful glass of Chateau Saint Michelle
