AKA Oh Baby Carrots, Broc & Shrooms. Simple vegetable dish made vegan friendly with Star Extra Virgin Olive Oil instead of butter. After a weekend of getting my T-Rex on Monday is a day to reflect and eat healthy.
My favorite go to vegetarian side dish. I like keeping it easy and sautéed. Using Value Added Produce there is virtually no prep involved. Total cooking time 15 minutes. Easily servers four to six as a side dish or two to three as a healthy main course.
8 each ounces blanched Baby Carrots
6 each ounces blanched Broccoli Florets
8 each ounces medium Mushrooms
1/4 each large diced Red Onions
2 each ounces Star Extra Virgin Olive Oil
1 each tablespoon minced Garlic
1/2 each teaspoon McCormick Oregano Leaves
1/2 each teaspoon McCormick Basil Leaves
1/2 each teaspoon McCormick Parsley Flakes
1/8 each teaspoon McCormick Coarse Ground Black Pepper
1/8 each teaspoon Morton Kosher Salt
3 each wedges Lemon
Wash your hands with medium hot water and soap. On medium high heat bring water (approximately 4 cups) to a boil. Carefully add 8 each ounces Baby Carrots to boiling water cook 3 minutes. Then add 6 each ounces Broccoli Florets stir to blend Baby Carrots and Broccoli Florets. Cook for 3 minutes turn off heat. In a calendar drain blanched vegetables and run cold water over for 30 seconds to cool. In a large skillet on medium high heat add 2 each ounces Star Extra Virgin Olive Oil heat 30 seconds. Add 8 each ounces medium Mushrooms and 1/4 each large diced Red Onion cook 3 minutes turning mushrooms occasionally. Add 1 each squeeze of Lemon, 1/2 each teaspoon McCormick Oregano Leaves, 1/2 each teaspoon McCormick Basil Leaves, McCormick Parsley Flakes, 1/8 each teaspoon McCormick Coarse Black Pepper and 1/8 each teaspoon Morton Kosher Salt. Stir in spice blend with sautéed mushrooms and onions cook 1 minute. Add blanched carrots and broccoli to mushrooms and onions and blend contents. Add 1 each teaspoon minced Garlic and squeeze 2 each wedges Lemon to vegetable medley cook 2 minutes stirring occasionally. Turn heat off and transfer medley to serving bowl.
Cook mushrooms top down to start for the first minute. Then turn mushrooms on side for one minute to assist in evenly cooking. After adding the spice mix stir immediately to avoid clumping.
The steps in this recipe move quickly. I like to add the minced garlic later in the process to avoid burning it. If you prefer to add the garlic in with the oil feel free to do so. Squeezing lemons in really enhances the flavor of the vegetables.
Simple healthy and inexpensive. If your on a budget make a vegetarian meal a couple times per week and pay yourself on the weekend. Very herb friendly feel free to add your own special blend of herbs dried or fresh.
