Every extended Hawaiian family the men are called brother or uncle and the women are called sister or auntie. I learned a variation of this dish at an early age so I could perfect it now. Mahalo Islander Confetti Beer Rice.
You start with the Beer Rice and everything else will fall into place. Meal time is a large part of Hawaiian family life. Much is shared and much is settled at dinner. This colorful dish has two striking flavor profiles that immediately jump out on your first bite. Pineapple and bacon a double threat to the usual peace and tranquility of steamed white rice. Don't worry Bra every ingredient plays well together. In fact the blend of ingredients will keep you coming for more. The Islander Confetti Beer Rice plays fair and there's plenty to share. This recipe makes 4 to 8 servings depending on the portion size. Goes well with chicken, beef or pork and kills as a side with seafood.
Preparing the Beer Rice. Instructions for using a rice cooker to steam white rice can be found in our Sides & Sauces section under the recipe for Steamy White Rice Nights. Using the same method first rinse the desired amount of rice for this recipe I used 2/3 cup of dry Calrose Rice poured into rice cooker insert pan. Rinse with cold water thoroughly and drain the water. Once the water has been drained out replace it with beer in this case Bud Light. Using the technique of allowing enough beer to come up to the first line of the knuckle on your index finger which is in contact with the very top of the rice level for this recipe I used about 10 ounces of beer. Place the prepped rice in the rice cooker and turn to cook let the cooker to the rest. This will yield approximately 1 and 1/2 cups Beer Rice.
1 and 1/2 cups cooked Beer Rice
3 each strips raw Farmer John's Bacon
4 each ounces diced Farmer John's Ham
1 each 8 ounces can Dole Pineapple Chunks (drained)
1 each shot glass Kikkoman Soy Sauce
1 each shot glass Wishbone Italian Dressing
1 each shot glass minced Garlic
2 each tablespoons diced Yellow Bell Pepper
2 each tablespoons diced Red Bell Pepper
2 each tablespoons diced Red Onion
2 each tablespoons pulled Italian Parsley leaf
1 each tablespoon chopped Green Onion
Wash your hands with medium hot water and soap. In a mixing bowl combine 1 and 1/2 cups cooked Beer Rice with 1 shot glass Wishbone Italian Dressing and 2 tablespoons Italian Parsley leaf. Mix well and set off to the side. In a preheated skillet on medium high heat cook 3 strips raw Farmer John's Bacon careful not to burn the bacon or bacon grease. When cooked remove bacon and allow to cool on paper towel. Pour the bacon grease into a different large skillet on medium high heat. Add 4 ounces diced Farmer John's Ham, 3 cooked strips diced Farmer John's Bacon, 1 can 8 ounces Dole Pineapple Chunks (drained) into hot bacon grease. Stir contents in skillet until blended and cook for 2 minutes. Then add 2 tablespoons diced Yellow Bell Pepper, 2 tablespoons diced Red Bell Pepper, 2 tablespoons diced Red Onions and 1 shot glass minced Garlic. Stir contents in skillet for 2 minutes you'll have a colorful confetti mix by now. Add the Beer Rice bowl you set aside to cooking confetti mix and stir until rice and confetti mix are well blended cook for 5 minutes stirring frequently. Finally add 1 shot glass of Kikkoman Soy Sauce and stir until blended. place in serving bowl and garnish with 1 tablespoon chopped Green Onions.
