AKA Hawaiian Boy Breakfast. On a visit to Maui a few years back I was enjoying a buffet breakfast at our hotel. Scooped out some steamed rice asked for a couple over easy eggs and tossed on some fried SPAM. When the eggs were done the cook asked me where I wanted them? I responded, "right on top of the rice". "Oh you eat just like a Hawaiian boy", was the response.
During the dark days of the war in the Pacific many on the Hawaiian Islands faced shortages. Certain food options were in short supply but one thing available was SPAM. I won't go into the details of what SPAM stands for. Instead I'll turn your attention to the love affair that grew from the availability. To this day a real Hawaiian breakfast always includes rice and SPAM. INGREDIENTS 3 each ounces sliced SPAM 2 each whole shell Eggs 3 each ounces Streamy White Rice Nights 1 each tablespoon Challenge Butter (salted or unsalted) 2 each slices Dole Pineapple Slices 1 each slice Naval Orange 1 each sprig fresh Parsley INSTRUCTIONS Wash your hands with medium hot water and soap. Prep Steamy White Rice Nights takes 30 minutes, Once steamed rice is prepped preheat medium skillet on medium high heat 30 seconds. Slice 3 each ounces SPAM in 1/4 to 3/8 inch thick slices (4 to 6 slices) place in preheated skillet. Cook SPAM on each side 4 minutes or until desired doneness once cooked set aside. Preheat a separate medium skillet on medium high heat for 30 seconds. Add 1 each tablespoon Challenge Butter to melt and coat pan. Once butter melts crack open 2 each whole shell Eggs in center skillet cook for 3 minutes. With a turning spatula loosen any sticking points between the eggs and pan. Then reduce heat to medium cook for 2 to 4 additional minutes. Scoop 3 each ounces Steamy White Rice Nights (use my molding technique to impress) on plate off center. Finish eggs to desired doneness and place on plate a top rice or shingle layered off center. In pan used for eggs place 2 each slices Dole Pineapple Slices grill in leftover butter 2 minutes on each side or until desired doneness. Start with 1 each slice Naval Orange on the upper edge of plate to begin shingling the slices of grilled pineapple then shingle the cooked slices of SPAM. When using two separate skillet to cook best to have everything prepped ahead to keep your focus on the pans. Adjust heat as needed. Pan fry cooking breakfast requires good timing so don't walk away to multi task. In every house there should be at least one designated egg pan. Eggs are tricky business and cook quickly. I've been flipping them for 40 years so I can really make it look easy. Sunny side up or scrambled should be your first attempts at eggs if you're just leaning. Let me tell you something brother, Hawaiians love their breakfast especially their SPAM. So show respect when in Hawaii do as the Hawaiians do.
