CALI BLACKENED CHICKEN KNOCKERS
4 to 6 each random Chicken Breast (10 to 14 ounces each)
1 each 4 ounce martini glass Star Extra Virgin Olive Oil
2 each shot glass McCormick Chili Powder
1 each table spoon McCormick Ground Cumin
1 each table spoon McCormick Paprika
1 each table spoon McCormick Ground Oregano
1 each teaspoon McCormick Pure Ground Black Pepper
1 each half teaspoon Morton Kosher Salt
Wash hands with medium hot water and soap. First make the Cali Blackening Mix. In a stainless steel mixing bowl pour 1 each martini glass of Star Extra Virgin Olive Oil, 2 each shot glass of McCormick Chili Powder, 1 each table spoon McCormick Ground Cumin, 1 each table spoon McCormick Paprika, 1 each table spoon McCormick Ground Oregano, 1 each teaspoon McCormick Pure Ground Black Pepper and 1 each half teaspoon Morton Kosher Salt. With a whisk or fork whip the contents until blended. Wash hands again to handle chicken. Place 4 to 6 each random Chicken Breast in Cali Blackening Mix and coat the chicken breast generously. Wash hands again after handling the chicken. In a skillet heated on a medium high flame place coated chicken breast face up. Cook on both sides 4 to 6 minutes. Put the partially cooked chicken breast in a baking pan and slide into a preheated oven at 350 degrees. Cook in the oven for 30 to 35 minutes or until it has reached the wellness you desire. Internal temperature for poultry should be 175 degrees or higher just keep in mind the higher the internal temperature the dryer the chicken will become.
